Raw Nacho Cheese Sauce


  • cups raw cashews (soaked at least 2 hours and rinsed)
  • Juice of 1 large lemon
  • cups water  (Use 3/4 cup and keep 1/4 cup to thin as needed, more may be needed to reach desired creaminess.  
  • 1/2 cup nutritional yeast (not raw)
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder (raw garlic can be used but it will add to the moisture content so reduce a smidge of water.)
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder (any pepper will work depending on how hot you like it)
  • 1 teaspoon cumin (more to taste)
  • teaspoons salt, or to taste

Other common additions you could experiment with...

  • 1 teaspoon tahini (some brands are not raw)
  • 1-2 teaspoons Sriracha, optional  (Some are not raw)
  • 1/2 teaspoon turmeric, optional for color
  • 1/2 teaspoon apple cider vinegar  
  • Hulled Hemp Seeds (Milds out the spice, adds protein and healthy fats) 

 ***I personally use all these additions most of the time.


Throw it all in your blender and go.  I add a swirl of sriracha after for an appealing spicy treat.
