Raw Vegan Tacos

Ingredients:
- 2 cups raw walnuts
- 1 tablespoon tamari or soy sauce/coconut aminos
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/8 teaspoon jalapeño pepper powder(optional, for heat, fresh peppers can also be used but will add more moisture content)
- Salt and pepper to taste

Instructions:

1. Soak the walnuts:
- Place the raw walnuts in a bowl and cover them with water.
- Let them soak for at least 2 hours or overnight. This step helps soften the walnuts and enhances their texture.  It also helps to release and wash away natural enzyme inhibitors that keep walnuts shelf stable for a long time but also slows down digestion.

2. Drain and rinse the walnuts:
- Drain the soaked walnuts and rinse them thoroughly under cold water.
- Pat them dry with a clean kitchen towel or paper towel.

3. Prepare the taco meat mixture:
- In a food processor, add the soaked and dried walnuts.
- Pulse a few times until the walnuts are coarsely chopped, resembling the texture of ground meat. Blending too long will turn them into paste.  This may be desired if making a taco dip, or a taco salad spread.

4. Add the spices:
- Add tamari or soy sauce, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if desired), salt, and pepper to the food processor.
- Pulse several times until the spices are well combined and the mixture resembles taco meat.

5. Adjust the seasoning:
- Taste the mixture and adjust the seasoning according to your preference. Add more salt, spices, or tamari/soy sauce if desired.

6. Serve and enjoy:
- Raw vegan walnut taco meat can be enjoyed in various ways:
- Fill taco shells or lettuce wraps with the walnut taco meat.
- Top with your favorite taco toppings, such as diced tomatoes, onions, avocado, salsa, or vegan sour cream.
- Serve alongside a fresh salad or as a filling for burritos or quesadillas.
