Cashew Milk

  • 1 Cup (160g) Raw Cashews (Soaked 2hours-overnight & rinsed)
  • 2 Medjool Dates pitted (more to your liking)
  • 3 1/2 Cups (800g) Water
  • 1/4 tsp Sea Salt
  • 1 tsp Pure Vanilla Extract

Other options add ins or common swaps (Cinnamon and Nutmeg give the milk a Chai Latte flavor.

  • 1/4 tsp Cinnamon 
  • 1/4 tsp Nutmeg
  • 3 tsp maple, honey or agave
  • Blend in fresh pumpkin (pumpkin spice)

You can throw all these ingredients into your blender, blend, strain, drink, but I have a few tips I have found worked the best for me.

Place your soaked nuts and half the water into your blender, nutri-bullet, or foot processor.  I find the small barreled high speed blenders work the best.  My cheap nutri-bullet does just fine.  Sometimes I put it through two cycles (my blender turns off at a certain time) to make sure the nuts are totally blended.  

Then Strain through a nut milk bag.  You can use other types of fine strainers but I find the nut milk bags to work the best. I personally use the "Bigger Better Nut Milk Bag".  Make sure to strain INTO A BOWL!!!  Lol.  Can sound simple but the first time - it can be forgotten and all your milk goes down the drain.  The nut pulp can be saved and dehydrated into cashew flour.

 Blend your dates with the other half of the water.  One or two cycles.  Add this mixture to the cashew milk along with the other ingredients.

Blend it all together.

Strain.

Enjoy.  

(Spices can be added after the blending process, so you can make a base cashew milk, and add the spices later as you need, and not make an entire batch of spiced milk.)
